12 May – Lisbon at CURA MICHELIN
Skilful curatorship – “curadoria” in Portuguese – lies at the heart of CURA, where Michelin-distinguished chef and head culinary curator Pedro Pena Bastos selects his ingredients as meticulously as an artist chooses his paints, drawing from Lisbon’s rich regional palette of seasonal ingredients to create artisanal dishes of great depth, taste and meaning.

16 May – Porto at ANTIQVVM MICHELIN
There are places in the world that, because of their location, exert a special power of attraction and this is definitely the case with Antiqvvm, situated in a leafy park in the centre of Porto, next to the Museu Romântico. This sensation is enhanced by its pleasant garden boasting idyllic views of the banks of the Douro!
In its elegant dining rooms, tastefully embellished with classic and contemporary decorative detail, chef Vítor Matos has a fondness for creative seasonal cuisine that places huge emphasis on his ingredients, combining these in a way that aims to enhance the main component of each dish (we particularly enjoyed the blue lobster with Moqueca, and the Silken & Smooth Tofu Mount Fuji, with chilli, citrus fruit, mango and curry). In his own words, the chef, who finds inspiration from his surroundings, “is continually striving to promote the values of cuisine that is cultural, natural, evolving, social and artistic”. He offers just two tasting menus: Sensory Moments (the Imperial Anjou Pigeon was our favourite dish) and Organic (vegetarian).

19 May – Salamanca at Casa Pacheco
This legendary restaurant in the Campo Charro area, which has been in the hands of the same family since 1916, is indelibly linked with the world of bullfighting and the matador Julio Robles (who was a friend of its owners), hence the rustic decor themed around this tradition and featuring unique photos of this “torero” as well as some of his bullfighting attire. The chefs at the helm, Cristina Martín and Sara Cámara, showcase traditional cuisine teeming with Iberian charcuterie, meat (including aged meat options), stews (such as the Pardina lentils from La Armuña with dewlap and chorizo picadillo), and delicious game options in season (we particularly enjoyed the loin of venison that is macerated in its own jus).

20 May Salamanca at Meson de Gonzalo
An impressive example of how to adapt to the times. The roast dishes, grilled meats and traditional classics stand alongside an array of more contemporary and fusion – inspired options. The steak tartare is well worth trying.

Tasting menu from €155
For those unfamiliar with the cuisine of Martín Berasategui, this restaurant occupying the Casa Gallardo (a majestic Modernist building dating back to 1914, next to the renovated Plaza de España), provides an opportunity to experience the inherent quality of his dishes in a highly exclusive setting. El Club Allard’s latest gastronomic venture is showcased on two tasting menus: (10 and 12 Tiempos), on which young yet experienced chef Juan Rodero showcases his own personality through cuisine which adds small classical touches while combining the influences of the past with the more daring aspects of contemporary cuisine. Spanish ingredients act as the common thread without closing the door on more exotic detail to provide added excitement. Signature dishes here include quail, foie gras, Chanterelle mushrooms and ravioli in broth; Carabinero prawns and their jus with green curry and mango vinaigrette; and cocoa, hazelnut, Mezcal and Espadín.
